25th Anniversary Wedding Nests Recipe
A 25th Anniversary is a great time to celebrate the love of a couple who have made it for a quarter of a century. To make these adorable wedding nests use the following recipes.
1 Box of white cake mix
Champagne
Champagne frosting (see recipe)
Coconut frosting (see recipe)
Shredded coconut
White jelly beans
Dove cake toppers
Champagne frosting
3 Cups of powder sugar
¼ Cup champagne
½ Teaspoons of vanilla
Mix all of the ingredients together until well blended. Add more champagne if needed to make the frosting the consistency of a glaze.
Coconut frosting
1 Cup of shortening
1 ½ Teaspoon of vanilla
½ Teaspoon of almond extract
2 ¼ Cups of powder sugar
Milk
2 Cups of shredded coconut
Mix the shortening, vanilla, almond extract, and powder sugar together until well blended. Add milk by the tablespoons until the frosting is the right consistency to spread. Mix in the coconut until well blended.
Assembling Wedding Nests
Make the cake mix according to the instructions on the box, except substitute the champagne for the water. Bake in individual Bundt molds at 350 for 20 minutes or until a toothpick is inserted and comes out clean. Cool completely. Brush the champagne frosting over each cake. Fill the centers with the coconut frosting. Place some coconut frosting on the top and sprinkle some shredded coconut on top to make it look like a nest. Place a dove on top of the nest, and place 2 white jelly beans next to the dove for an egg.
