Tres Leches 25th Birthday cake Recipe
A 25th birthday party can be tricky to plan. 25 is the age when you still feel young, but have matured. Many people want a mature party, and are not interested in the same themes as they were at a younger age. A Tres Leches cake is the perfect alternative to the traditional birthday cake. This cake is still fun for the younger side, but is more elegant for the grown up side. A Tres Leches birthday cake is simple to make and looks elegant on a serving plate. Use the following recipe to make this great alternative.
1 box of regular white cake mix
3/4 cup butter, softened
6 eggs
1/2 cup water
2 tablespoons finely shredded lime peel
1 recipe Tres Leches sauce
3 cups fresh strawberries, chopped
1 cup whipping cream
3/4 cup granulated sugar
1teaspoon vanilla
Tres Leches Sauce
In a saucepan combine two 12-ounce cans evaporated milk, two 14-ounce cans sweetened condensed milk, and 2 cups milk or whipping cream. Cook over medium heat just until boiling, stirring frequently. Remove from heat. Transfer to a large bowl. Cover; cool completely. Makes about 7-1/2 cups sauce.
Mix together the cake mix, butter, eggs, and water until well blended. Stir in the lime peel and continue to mix for 2 minutes. Pour into a 10 inch prepared springform pan. Bake at 350 degrees for about 50 minutes, or until a toothpick can be inserted and comes out clean. Let the cake cool and remove from pan. Cut the cake in half in order to have two round cake layers. Top one layer with strawberries, and place the other layer on top of the strawberries. Use the end of a wooden spoon to poke holes through the cake layers, and pour the Tres Leches sauce over the cake. Place in the refrigerator overnight. Right before serving mix the whipping cream, sugar, and vanilla in a bowl until soft peaks form. Frost the cake with the whipping mixture.
