12 Medium potatoes
1 8 ounce tub of chives and onion cream cheese
½ Teaspoon of salt
Dash of pepper
1/3 to 2/3 Cup of milk
4 Egg whites
2 Tablespoons of parmesan cheese
2 Tablespoons of fine bread crumbs
4 Teaspoons of melted butter
Peel and cut the potatoes and boil until tender. Drain the potatoes and mix in the cream cheese, salt, pepper and milk until light and fluffy. Mix in the egg whites until well blended. Put the potatoes into a cake decorating bag with a large star tip. Squeeze the potatoes into 12 soufflé dishes that have been sprayed with the non-stick cooking spray. Mix the parmesan cheese, bread crumbs, and butter and sprinkle over the potatoes. Bake at 325 degrees for 20-25 minutes. Serve in the soufflé dishes.
