1-1/4 cups milk
1cup all-purpose flour
1egg
1 teaspoon cooking oil
1/4 teaspoon baking powder
6 green onions
1 tablespoon olive oil
1-1/2 cups chopped cooked chicken breast or turkey
1/4 teaspoon ground white pepper
1/2 cup reduced-sodium chicken broth
1/3 cup dry white wine
1 5.2-ounce package Boursin cheese
1/4 teaspoon salt
1/8 teaspoon dried tarragon, crushed
Combine the milk, flour, egg, oil, and baking powder in a blender. Mix until all ingredients are well blended. Place 2 Tablespoons of batter into a hot greased skillet. Tilt the skillet to make the batter into a thin circle. Cook for about 1 minute on each side to make crepes. Slice the green part of the green onions into long strings and boil for 2 minutes, rinse with cold water. Cook chicken in the olive oil over medium heat. Add the pepper, broth, and wine. Bring to a boil. Once the liquid is half gone, add the cheese, salt, and tarragon until thickened. Place a heaping tablespoon of the chicken mixture into the middle of each crepe. Pull up the sides of the crepe around the chicken mixture to make a purse. Tie together with the green onion strings.
