50th Birthday Lemon Tea Cakes Recipe
A 50th birthday party is a true celebration. The guest of honor has seen many things change over their 50 years, and they have probably done raised a family of their own. A traditional birthday cake just won’t cut it for such a great celebration. Instead serve Lemon Tea Cakes. These little cakes are easy to handle and go great with any of the other foods and drinks that you can find at 50th Birthday Theme Party

. Use the following recipe to make the Lemon Tea cakes that will make the guest of honor feel like royalty.
1 cup granulated sugar
6 eggs, slightly beaten
1 tablespoon lemon juice
2 teaspoons vanilla
1 cup all-purpose flour
1/2 cup unsalted butter (do not use substitutes), melted and cooled
1 tablespoon finely shredded lemon peel
4-1/2 cups granulated sugar
2-1/4 cups water
1/4 teaspoon cream of tartar
1 tablespoon lemon juice
6 to 6-3/4 cups sifted powdered sugar
Mix eggs and 1 cup of sugar into a heat proof bowl until well blended. Place the bowl over boiling water, but do not let the bowl touch the water, and heat until the egg mixture is lukewarm. Add the first tablespoon of lemon juice and the vanilla to the egg mixture. Beat the egg mixture on high for 10 minutes. Gently fold in the flour until well blended. Fold in the melted butter and lemon peel until well blended. Pour batter into a 9x13 pan that is greased and lined with wax paper. Bake 350 degrees for 25 minutes or until a toothpick can be inserted and comes out clean. Place on a wire rack to cool for 10 minutes. Remove from pan and peel off wax paper, and let cool completely. Bring the rest of the sugar, cream of tartar, and lemon juice to a boil on medium heat. Stir constantly until the sugar is fully dissolved. Add in the powder sugar till the mixture is the right consistency to drizzle. Cut the cake into 2 inch squares and dip into the sugar mixture. Allow the sugar mixture to harden on the cakes. Drizzle more of the sugar mixture on to the cakes for decorations and allow the sugar to harden. Serve on a tiered serving tray.
