American Chopper , then you'll love this very manly recipe for Ballymaloe Irish stew. For this recipe, you need 3 pounds of Lamb neck chops, 4 medium carrots, 4 medium onions, 1 tablespoon of butter, lamb or beef fat drippings, 4 potatoes, 1 cup of meat stock or water, one tablespoon chopped parsley, 1 tablespoon chopped chives, and salt and pepper to taste. To start, shred up some of the of the lamb fat and render it down (melt it) in a heavy casserole pan. Peel the potatoes, carrots and onions. Cut the onions and carrots into quarters. Cut the meat into 8 pieces, cutting away the excess fat. Leave the bones in. Toss the meat in the rendered fat until lightly browned. Add onions and carrots and cook for another five minutes, until vegetables are tender. Add stock and season to taste. Put whole potatoes on top of soup. Bring to a boil, then reduce heat to simmer. Pour off the cooking liquid on the top. Pour the grease out of the cooking liquid, then heat the liquid in a separate saucepan. Add butter, chives and the parsley to the liquid. Pour the liquid back over the stew.
This will serve four people. The stew is very filling and delicious, meaning it's sure to be a hit at your next American Chopper party.
