One great dish to serve to your guests is barbecued Chile-marinated pork spare ribs. For this recipe, you'll need: two racks of pork spareribs, eight seeded dried new Mexican chilies (or any other chilies of your choice), , ¾ cup of hot water, one half cup ketchup, two cloves of garlic, one half cup cider vinegar, three tablespoons of firmly packed brown sugar, two tablespoons of salt, three tablespoons of tequila (ole!), one half cup of vegetable oil, one half tablespoon of cumin, and one 1/8 teaspoon allspice.
Take a large kettle and put the spareribs inside. Cover them with water and bring the water to a boil on the stove. Reduce heat and simmer the ribs for about 50 minutes. Skim the froth from the top of the water if necessary. Meanwhile, combine the remaining ingredients in a blender or food processor. Blend until you have a sauce. In a large tray, generously coat the ribs with some of the Chile sauce and reserve some in a small bowl. Cover the bowl and chill for at least eight hours or overnight. Let the ribs stand at room temperature for one hour and then grill them on an oiled barbecue for five to six minutes on each side. Simmer the refrigerated sauce in a saucepan until warm, and serve with the ribs.
