This recipe will be made with brightly colored mini cupcake liners, but can also be made with traditional size cupcake liners. Regardless of the size of the chiffon cupcakes the guests will be very pleased with the taste.

Making mini chiffon cupcakes for a Cheerleading party can be done a variety of ways. First, preheat the oven to 325° and line the mini cupcake pans with colorful mini cupcake liners. Then mix the dry ingredients (2 measuring cups of flour, 3 level teaspoons of baking powder and 2 sprinkles of salt) in a mixing bowl. Next, add in the following ingredients: six egg yolks, 1/3 cup of cooking oil and 1 cup of cherry juice. At this point, use an electric mixer and beat until very smooth. Then in another mixing bowl, combine 6 egg whites, ½ cup cherries, 1 teaspoon vanilla and ½ teaspoon cream of tartar and mix thoroughly. Next, combine the two bowls along with the six egg whites and mix thoroughly. Then, neatly spoon the batter into the mini cupcake liners and bake for approximately twenty-minutes (checking after fifteen minutes). When the cupcakes have cooled, frost each cupcake with soft white icing and add a cherry to the middle of each little cupcake. This dainty dessert will be very pleasing to the guests.
