1/2 cup rolled oats
3 teaspoons all purpose flour
1 teaspoon baking powder
1 teaspoon vanilla extract

1/2 cup raisins
1/2 cup unsweetened coconut flakes
½ cup chopped pecans

To make the cookie base: Preheat the oven to 350F. In a bowl, combine the flour and sugar, and then cut in the butter until the mixture resembles coarse crumbs. Press the dough into a 13 X 9 baking pan. Bake for 15 minutes or until golden brown.

To make the topping: In a bowl, blend together the butter and eggs. Mix in the sugar, rolled oats, flour, baking powder, vanilla, and salt. Stir in the pecans, coconut and rains. Pour the mixture over the cookies. Bake the cookies in the oven at 350 degrees for 20 -25 minutes or until the topping is golden brown and springs back when lightly touched. Run a knife around the edges, and let the pan cool completely on a wire rack. Cut them into squares when they're completely cooled.

You can make these coconut butter tart squares up to a day ahead of time. They're sure to be a big hit at your cheerleader party!
