1-1/2 Teaspoons of finely shredded lemon peel
1/3 Cup lemon juice
2 Tablespoons refrigerated egg product
1 to 2 dashes of hot pepper sauce
1 Clove of garlic, minced
1/4 Teaspoon salt
1/8 Teaspoon black pepper
1-1/2 Cups olive oil
3/4 Cup whipping cream
4 Pounds of cooked crabmeat chopped

Put the lemon peel, lemon juice, egg product, hot pepper sauce, garlic, salt, and pepper in a blender. Blend until the ingredients are mixed well together. While the blender is still running, pour the oil in a stream until it is mixed well with the other ingredients. It should be the consistency of mayonnaise. Place the mixture into a bowl and refrigerate for 2 days. In a separate bowl whip the whipping cream with an electric mixture until soft peaks form. Fold the whipping cream into the mixture that was pulled out of the refrigerator. Divide the crab meat into 50 shot glasses. Top the crab meat with the whipped cream mixture, then with caviar. Use the chive stems as a garnish.
Although this recipe takes a couple of days to make, it will be worth it once you see the reaction at your cocktail party. The guests are sure to enjoy this crab cocktail. You will be the star of the party.
