Disco Theme Party, serve food that your guests will enjoy and will take you back to the 70s. Swedish meatballs were a popular party food in the 70s, and are just as delicious today as they were back then. To make Swedish meatballs, you need:
2 cups soft bread crumbs
2/3 cups milk
1/2 cup onion, minced
4 tablespoons butter
1 1/2 lb ground veal or beef
3 eggs, lightly beaten
3 tablespoons flour
1 cup water
1 cup sour cream
2 tablespoon minced parsley
1/2 teaspoon pepper
2 teaspoons salt
1 teaspoon paprika
1 teaspoon nutmeg
1 tablespoon concentrated meat extract
To make the meatballs, soak the breadcrumbs in the milk until they're soft. Add the onion and one tablespoon of the butter in a small saucepan. Cook the onions until translucent. Mix the soaked breadcrumbs, cooked onion and meat. Add the eggs, salt, pepper, paprika and nutmeg. Mix thoroughly until the mixture is very smooth. Dust your hands with flour and shape the mixture into small balls. Melt the remaining butter in the pan. Add the meat balls and fry them until golden brown all over. Remove the meatballs from the pan. Add to the pan the meat extract and three tablespoons of flour. Cook and stir the ingredients until the sauce is well blended. Add some water, and pepper to taste. Reduce to heat to low and cook for five minutes. Stir in the sour cream one tablespoon at a time. Return the meatballs to the gravy. Cover the and simmer gently for ten minutes. Serve in a deep casserole dish sprinkled with minced parsley.
This recipe makes 70 or 80 Swedish meatballs. Your guests are sure to love this delicious dish at your groovy party!
