The large, plain sponge cake will take one cup of flour, 4 eggs, 1 cup of sugar, 2 tablespoons of lemon juice, a bit of lemon rind, and ½ teaspoon of salt. Separate the eggs and beat the yolks and whites separately, the whites until they form stiff peaks. Mix everything together, except the whites, and at the end fold them into the batter gently. Use the same ingredients for the second and third cakes, cut in half and placed in smaller pans. Bake the three cakes in a slow over at 300 degrees Fahrenheit for 50 to 60 minutes. After they are cooled down, they can be removed from the pan and decorated. Place the ears strategically like Mickey’s ears, and the dark chocolate frosting will patch the three cakes all together. Use white frosting for the eyes, and pink for the rest of the face. This cake is bound to cause lots of smiling!
