Carrot Cake with Cream Cheese Frosting Recipe

4 eggs
1 1/4 cups vegetable oil
2 cups white sugar
2 teaspoons vanilla extract
2 cups all-purpose flour
2 teaspoons baking soda
2 teaspoons baking powder
1/2 teaspoon salt
2 teaspoons ground cinnamon
3 cups grated carrots
1 cup chopped pecans
1/2 cup butter, softened
8 ounces cream cheese, softened
4 cups powder sugar
1 teaspoon vanilla extract
1 cup chopped pecans
In a large bowl mix the eggs, vegetable oil, sugar, and vanilla extract together until well blended. Mix in the flour, baking soda, baking powder, salt, and cinnamon into the sugar mixture until well blended. Stir in the carrots and pecans. Pour the batter into a greased cake pan. Bake at 350 degrees for 40-50 minutes, or until a toothpick can be inserted into the middle of the cake and it comes out clean. Allow to cool. Remove the cake from the pan and place on a serving plate. In a separate bowl beat the butter, cream cheese, and vanilla together until soft and fluffy. Beat in the powder sugar and continue to beat until the mixture is smooth and fluffy. Spread the frosting onto the cooled cake. Sprinkle with the chopped pecans.
