Election Day Cookie Recipe

Use the following recipe to make Election Day cookies.
1 cup butter, softened
1 cup powder sugar
1 egg
1-1/2 teaspoons almond extract
1 teaspoon Vanilla Extract
2-1/2 cups all-purpose flour
1 teaspoon salt
Frosting
6 tablespoons butter, softened
2-2/3 cups powder sugar
1 teaspoon Vanilla Extract
1 to 2 tablespoons milk
Red and blue food coloring
Assorted red, white, and blue sprinkles
Cream the butter and powder sugar together until light and fluffy. Mix in the egg, almond extract, and vanilla extract until well blended. Add in the flour and salt. Mix until well blended. Roll the dough into two balls and refrigerate for 30 minutes. Roll the dough out on a lightly floured surface until the dough is 1/8 of an inch thick. Use elephant and donkey cookie cutters to make the shapes. Bake at 350 degrees for 10 minutes or until golden. Let the cookies completely cool. In a large bowl mix the butter, powder sugar, vanilla extract, and milk until the frosting is the consistency to spread. Divide into 2 bowls. Tint one bowl with the blue food coloring and one bowl with the red food coloring. Leave the third bowl white. Decorate the cookies with the colored frosting and the sprinkles.
