Everybody loves Elmo and having an Elmo themed party complete with Elmo designed cupcakes are sure to be special. From white cupcakes tinted with red food coloring to chocolate cupcakes with Elmo cupcake toppers the options for an Elmo party are almost endless. Elmo cupcakes can be created by making a white cake mix and adding just a touch of red food coloring to give the mix color and the look of Elmo. These cupcakes can be designed numerous ways to give an Elmo look to the table and make them perfect for an Elmo party.
The following recipe is for a white cake and is perfect for making Elmo themed cupcakes. First of all, line the cupcake pans with Elmo themed cupcake liners or mini muffin liners (depends on the size of cupcakes that you are making). Then preheat the oven to 350° while you prepare the batter using the following recip.
Elmo Cake
2 cups all purpose flour
1 teaspoon baking of powder
½ teaspoon of baking soda
½ teaspoon of salt
½ cup of margarine or butter
1 ½ cups of sugar
Four eggs
1 cup of buttermilk
1 teaspoon of vanilla
Mix the following ingredients in a bowl to make the Elmo cupcakes: flour, baking of powder, baking soda, salt. Then add the margarine or butter and mix until smooth. Next add the sugar, four egg whites, buttermilk and vanilla and mix for about two minutes with an electric mixer. Then, spoon the batter into the cupcake or mini muffin pans and bake for about 20 to 25 minutes. When the cupcakes have cooled, decorate them with red and white frosting (tint white frosting with red food coloring to make the perfect red color for the Elmo designs). However, only frost about half of them using red food coloring (some children can not have red food coloring) and then frost the rest with the white food coloring. At this point, add Elmo related cupcake toppers or Elmo novelty rings to complete the designs. Another interesting way of topping these includes using whipped topping to make two large eye areas and adding a raisin in the middle. Then adding a jellybean for the nose. This gives a great Elmo appearance. These adorable cupcakes along with a variety of Elmo party supplies will make your party complete.
