Flag Day celebrates the acceptance of the American flag on June 14th by Congress in 1777, and is a great reason to celebrate with some all-America, all-fantastic cupcakes to go with your super party supplies.
This is the perfect time to make your cupcakes look like the American flag, especially since that's what Flag Day is all about! There's a fantastic recipe below that will help you make spectacular American flag cupcakes, but bear in mind you don't HAVE to use the flag, even though it is flag day – it's about celebrating America and it's freedom, so you could use other things that represent America such as the eagle or the national anthem. However, the American flag is, obviously, the most popular for this day. The following recipe makes approximately 24 cupcakes in total.
For your Flag Day cupcakes and decoration, you will need: 1 package of French vanilla cake mix (or you could make your own vanilla cupcakes – it's up to you!), ½ a cup of applesauce, 3 eggs, 1 cup of water, 2 cups (or thereabouts) of small fresh blueberries, ½ a cup of dried cherries, 8oz of cream cheese at room temperature, ½ a cup of sugar, 1 teaspoon of pure vanilla extract and 1 roll of red-colored fruit snack or fruit leather.
The recipe for your Flag day cupcakes: Soak the dried cherries in hot water for 15 minutes to plump. Drain thoroughly, then dry with paper towels and set aside.
Preheat the oven the 350F. Line a standard-size cupcake tin with foil or paper cups.
Combine your cake mix with the applesauce, eggs and water, and mix on a low speed for approximately 30 seconds. Increase to a medium speed and beat for another 2 minutes. Fold in the cherries.
Divide the batter evenly into the 24 paper-lined cupcake cups. Drop 5 blueberries on top of the batter for each cupcake. Do NOT press the blueberries into the batter!
Bake for 18-20 minutes until lightly browned. Allow cupcakes to cool to room temperature on wire racks before proceeding.
Beat the cream cheese with the sugar and vanilla extract until smooth and creamy. Spread the cream cheese frosting on the top of your cooled cupcakes.
Use the remaining blueberries to stud the cupcakes in rows (for the stars) over the upper left quarter of the cupcake.
Cut the roll of fruit leather snack into strips 1/8 inch wide and 2 inches long. Place red fruit strips across the remainder of the cupcake surface in rows for the stripes over the frosting. Place in the refrigerator to allow frosting to set.
