Blueberry Waffles with Blueberry Sauce Recipe
Flag Day is celebrated in June and is not to be confused with Independence Day that is celebrated in July. Flag Day is when America adopted the famous red, white, and blue flag.
Flag Day Theme Party can start first thing in the morning by serving blueberry waffles with blueberry sauce. Add a strawberry for garnish to showcase the colors red, white, and blue like the flag.
Use the following recipe to make blueberry pancakes with blueberry sauce.
Waffles
3 egg yolks, beaten
1 2/3 cups milk
2 cups all-purpose flour
2 1/4 teaspoons baking powder
1/2 teaspoon salt
1/4 cup melted butter
3 egg whites, stiffly beaten
2/3 cup blueberries
Blueberry Sauce
1 1/2 cups blueberries
3 tablespoons honey
1/2 cup orange juice
1 tablespoon cornstarch
Whisk together eggs and milk. Stir in the flour, baking powder, and salt until well combined. Stir in butter and let the batter sit aside for 30 minutes. Fold in the egg whites and 2/3 cup of blueberries. Using a ladle, spoon the batter into the prepared waffle iron. Cook until the waffles are golden brown. In a medium saucepan combine the blueberries, honey, and ¼ cup of orange juice. Bring the ingredients to a boil. Mix the remaining orange juice and cornstarch together. Add the cornstarch mixture to blueberries, and continue to heat until the syrup thickens. Make sure to stir constantly to prevent burning. Pour the syrup over the waffles. Cut up a strawberry and set on top.
These blueberry waffles with blueberry sauce are sure to be a hit for Flag Day. These waffles can be served anytime of the day if the party starts later.
