Tropical Fruit Pie Recipe

The following recipe makes a great tropical fruit pie.
1 Package of refrigerated sugar cookie dough
1-1/2 8-ounce package cream cheese (12 oz.), softened
2/3 cup sifted powdered sugar
1/4 cup whipping cream
1 tablespoon of orange juice
1 teaspoon vanilla
2 to 2-1/2 cups of assorted fruits (kiwi fruit, raspberries, papaya, and strawberries)
2 tablespoons of apricot preserves
1/2 teaspoon of orange juice
Roll the sugar cookie dough into a 9 inch circle and press into a pie pan. Bake for 10 minutes or until golden at 350 degrees. Mix the cream cheese, powder sugar, whipping cream, and 1 tablespoon of orange juice until well blended. Refrigerate for about an hour. Peel and cut up the fruits. Spread the cream cheese mixture across the bottom of the cookie pie shell. Top with the tropical fruit. Heat the preserves and ½ teaspoon of orange juice until melted. Drizzle over the fruit. Refrigerate for about an hour before serving.
