First, line the cupcake pans with Indianapolis 500 themed cupcake liners and then preheat the oven to 350°. This recipe using the following ingredients will make approximately twenty-four cupcakes: 1 teaspoon baking soda, 1 ˝ cup all purpose flour, 1 cup sugar, ˝ cup cocoa, ˝ cup butter or margarine, ˝ cup hot water, ˝ cup milk, 1 teaspoon vanilla and 1 egg. First, mix the baking soda and the hot water together and stir until the baking soda completely dissolves. Add this point, add the rest of the ingredients and mix thoroughly with an electric mixer until smooth. Then using a teaspoon put the batter by spoonfuls into the cupcake liners (filling about 3/4 of each liner). Finally, bake the cupcakes for approximately fifteen to twenty minutes, checking on them after fifteen minutes. After they have finished baking use a toothpick to see if they are thoroughly baked. Then after they have cooled frost them with chocolate fudge icing and then decorate with miniature Nascar cars and Indianapolis 500 cupcake toppers for a dessert that will come in first at the finish line.
