La Quinceanera Chicken a La Spring Recipe
La Quinceanera is just as big and important in the Hispanic tradition as an American sweet 16 party. The difference between a La Quinceanera and a Sweet 16 is that in the Hispanic tradition this is a party thrown for a girl on her 15th birthday. Making chicken a la spring does not take long, and is easy, just use the following recipe.
3 tablespoons cooking oil
2 cloves garlic, minced
1 tablespoon finely shredded lemon peel
6 to 8 fresh sorrel leaves
1 lemon, cut into wedges
1 3- to 3-1/2-pound whole broiler-fryer chicken
2/3 cup reduced-sodium chicken broth
1-1/2 teaspoons potato starch or cornstarch
1 tablespoon lemon juice
Salt and pepper
2 tablespoons coarsely shredded fresh sorrel or spinach leaves
Red Russian kale or other kale variety
Chamomile flowers or other edible flowers
Cook the oil and garlic over low heat for 2 minutes, remove from heat and stir in lemon peel. Set aside. Place the sorrel leaves and lemon wedges into the cavity of the chicken. Lift up the skin of the breast area and brush some of the oil mixture under the skin. Lay the skin back down and brush some oil mixture over the rest of the skin of the chicken. Tie the legs together and push the wings under the back of the chicken. Let stand at room temperature for 30 minutes. Place the chicken, with the breast side up, in a shallow pan. Roast the chicken for 1- 1 ¼ hours at 375 degrees. Baste with remaining oil mixture about halfway through. Pour 2 tablespoons of pan drippings, lemon juice, salt, and pepper into a pot with the potato starch. Heat until thickened. Pour in a bowl to set beside the chicken as optional gravy, top with the sheered sorrel or spinach leaves. Place the chicken on a platter and use the Kale and flowers to decorate the chicken.
