Kings Cake Recipe

You can make your own kings cake using the following recipe.
3-1/2 to 4 cups all-purpose flour
1 package active dry yeast
1/2 cup milk
1/3 cup sugar
1/4 cup butter or margarine
1/2 teaspoon salt
3 eggs
1/2 cup diced candied citron
1 pecan half
1 cup sifted powdered sugar
1/2 teaspoon vanilla
Milk
Green-and yellow-colored sugar
In a large bowl combine 1 ½ cups of flour and the yeast package. In a saucepan heat the milk, sugar, butter, and salt until warm and the butter is almost completely melted. Stir constantly to prevent the milk burning. Add the heated mixture to the flour and yeast. Add the eggs. Mix on low speed for 30 seconds. Continue mixing on high speed for 3 minutes. Stir in the citron. Use a spoon to stir in as much of the remaining flour as you can. Place the dough on a lightly floured surface. Kneed in enough of the leftover flour to make the dough stiff, smooth, and elastic. Place into a greased bowl and turn once to grease the surface of the dough. Let rise until double the size. Punch the dough down and let stand for 10 minutes. Press the pecan into the dough. Shape dough into a 30 inch roll and bring the ends together to form a ring. Place on a greased baking sheet and let rise until almost doubled. Bake at 350 degrees for 25-30 minutes or until golden brown. Cool on wire rack. In a bowl mix together the powdered sugar, vanilla, and enough milk to make a thin frosting. Spoon the frosting over the cake. Sprinkle the sugar in a spoke fashion to alternate the colors on top of the frosting. Your guests are sure to love this homemade kings cake.
