Pink Champagne Cake Recipe

Use the following recipe to make pink champagne cake.
2-3/4 cups sifted flour
1 Tablespoon baking powder
1 teaspoon salt
2/3 cup shortening
1-1/2 cups sugar
3/4 cup champagne
6 egg whites
Coconut Filling
1/4 cup butter
16 large marshmallows, quartered
1 Tablespoon white wine
1 cup flaked coconut
Fondant Frosting
1 pound powdered sugar
1/4 cup light corn syrup
1/4 cup water
1-1/2 teaspoons vanilla
Dash salt
Few drops almond extract
2 to 3 drops red food coloring
Combine the flour, baking powder, and salt until well combined. In a separate bowl cream 1 cup of sugar and shortening together until light and fluffy. Alternate adding the champagne and flour mixture until you get a smooth batter. Beat the eggs until stiff then add the remaining sugar and beat until meringue texture. Fold the meringue into the batter and stir gently with a whisk. Pour into 2 nine inch cake pans that have been floured and greased. Bake at 350 degrees for 25-30 minutes, or until done. Let stand for 10 minutes and then turn out onto wire racks to cool. Combine the butter, marshmallows, and wine into a double boiler. Cook until the marshmallows are completely melted, and then add the coconut. Let cool until it is thick enough to spread. Spread the mixture between the two cakes. Put the sugar and corn syrup in a double boiler and cook until smooth. Add the vanilla, salt, almond extract, and food coloring. Keep the frosting warm so that it spreads easily over the cake.
