However, if you're stuck for ideas for your Oktoberfest cupcakes, here's a recipe for ginger and vanilla cupcakes decorated in blue and white that will work wonders for you and your culinary skills! This recipe makes 16 cupcakes in total.
In a saucepan, combine the following
3.5oz Molasses (or treacle)
4.4oz Butter
3.5oz Muscovado sugar
Cook this mixture until the butter is melted and the sugar is dissolved.
Then add the following and mix well with whisk
2.6oz Milk
2.6oz Buttermilk
1 egg, beaten
In a separate large bowl - add the following ingredients
2.6oz Millet Flour
2.6oz Quinoa Flour
1.7oz Teff Flour
0.8oz Corn Starch
1 teaspoon Baking Powder
1/2 teaspoon Baking Soda
A pinch of salt
2 teaspoons ground ginger
Sift the above dry ingredients several times.
Then add the wet ingredients to the dry and mix using a whisk. You don't want to over mix the flours.
Fill cupcake liners 2/3 full and bake in a preheated oven 350°F for 20 minutes. You may need to bake 1-5 min longer depending on your oven. Use a toothpick inserted into the middle row of cupcakes to test if they're done.
Cool in cupcake pan for 10 minutes, then remove and cool on a wire rack until completely cool. Then decorate with rings of white and blue piped icing, starting on the outside and alternating between colors as you get closer to the middle of the cupcake.
