German Potato Salad Recipe

Oktoberfest Theme Party. German potato salad does differ from the traditional mustard potato salad, but it is very flavorful.
German potato salad is easy to make using the following recipe.
4 pounds red potatoes, halved (make sure to use red potatoes and not substitute regular baking potatoes.)
1 pound Bacon, cut into 1/2-inch pieces
1 cup chopped green onion
1/4 cup all-purpose flour
1/4 cup white sugar
1 1/2 teaspoons salt
1 cup apple cider vinegar
2 teaspoons celery seed
2 tablespoons chopped fresh parsley
Place the potatoes in a pot of salted water. Cook until tender. Drain and cut the potatoes into bite sized pieces. Place the potatoes into a large mixing bowl. Place the bacon and onion into a deep skillet and cook until the onion is very tender. Stir in the flour, sugar, and salt. Stir in the vinegar and cook until slightly thickened. Pour the dressing over the potatoes and sprinkle with the celery seed and parsley. Toss the mixture until the potatoes are completely covered. This dish can be served hot, or cold.
