Passover is a great time to make some fantastic, traditional cupcakes. Passover is a Jewish holiday and festival. It commemorates the story of Exodus, in which the ancient Israelites were freed from slavery in Egypt. Passover begins on the 15th day of the month of Nisan, or March-April in the Gregorian calendar. It is celebrated for seven or eight days, and is one of the most widely known Jewish holiday. Because of this, it's a great reason to make some celebratory cupcakes, and share in the ideology and reasons behind Passover with your family, friends, co-workers, or party guests. If you are having a party for Passover, it's a good idea to keep your party supplies and your cupcakes going along the same themes or colors or motifs, so just bear that in mind.
It is important to understand and respect Jewish ideals and rules when you're making cupcakes for Passover, so be sure to ask all your guests whether they require kosher food. However, all Jewish followers will gladly eat kosher cupcakes, so below is a great recipe for Kosher Passover chocolate cupcakes that will help you make the perfect cupcakes for your Passover party.
For your Passover cupcakes, you will need: ½ a cup of water, ¼ teaspoon of salt, ¾ cup of white sugar, 18oz of bittersweet chocolate chopped into small pieces, 1 cup of unsalted butter at room temperature, 3 eggs and 3 egg whites.
For the chocolate frosting, you will need: 8oz of cream cheese at room temperature, ¼ cup of unsalted butter at room temperature, 4 cups of sifted powdered sugar (this can be decreased if you don't mind it not being as stiff for piping) and ½ a cup of cocoa powder
Combine the water, salt, and sugar in a small saucepan over medium heat. Stir until completely dissolved and set aside. Either in the top half of a double boiler or in a microwave oven, melt the bittersweet chocolate. Pour the melted chocolate into the bowl of an electric mixer. Cut the butter into pieces and beat the butter into the chocolate, 1 piece at a time. Beat in the hot sugar-water. Slowly beat in the eggs and the egg whites one at a time. Pour the batter 3/4 to the top of lined cupcake tins. These don't rise (hence the kosher for Passover status) so you can go higher if you'd like. Have pans larger than the cupcake tins ready. Put each cupcake tin in a larger pan and fill the pan with boiling water halfway up the sides of the cake pan. (You can get an idea of how I did this in the picture at the right. Mine could actually be filled a bit higher. I filled it more in my second batch.) Bake cupcakes in the water bath at 300 degrees F (150 degrees C) for 30 minutes. The center will still look wet. Do not take the cupcakes out of the tin! Wait until the tins are cool enough to handle with your bare hands, then put the entire cupcake tin in the fridge until it is cool. Then remove the cupcakes from the tin and frost. If you take the cupcakes out of the tin while they are still hot, they will lose their shape.
For your chocolate frosting, mix the cream cheese and butter until smooth and creamy. Mix in powdered sugar, one cup at a time, then mix in the cocoa powder.
