Abraham Lincoln’s Scalloped Oysters Recipe
President’s Day is the day where we recognize not only our current President, but also those who came before him. One of the most influential Presidents was Abraham Lincoln. To make Abraham Lincoln’s scalloped oysters use the following recipe.
1/4 cup butter, melted
2 cups coarse cracker crumbs
2 dozen oysters, scrubbed, shucked, drained, with liquid reserved
1/4 teaspoon pepper
1/3 cup cream
2 tablespoons sherry
1 teaspoon Worcestershire sauce
Preheat the oven to 425 degrees. Grease a shallow baking dish and set aside. Mix together the melted butter and the cracker crumbs, set aside. Combine the reserved liquid from the oysters, pepper, cream, sherry, and Worcestershire sauce. Set the mixture aside. Spread one third of the cracker crumbs in the greased baking dish. Put half of the oysters over the cracker crumbs, and pour half of the liquid reserve mixture over the oysters. Layer another third of the cracker crumbs over the oysters, and put the remaining half of the oysters and liquid over the second layer of cracker crumbs. Top with the remaining cracker crumbs. Bake for 10 to 15 minutes until the cracker crumbs are browned.
