For your Rosh Hashanah cupcakes, you will need:
6oz of frozen orange juice concentrate, thawed and undiluted
1 cup of honey
1 cup of very strong coffee
4 eggs
2 tablespoons of salad oil
1 cup of sugar
3 1/2 cups of sifted all purpose flour
1/4 teaspoon of salt
2 teaspoons of baking powder
1 teaspoon of baking soda
1/3 teaspoon of ginger
1/3 teaspoon of cloves
1 1/3 teaspoons of cinnamon
sliced almonds (optional)
To make your Rosh Hashanah cupcakes:
Combine orange juice concentrate, honey, and coffee. In a separate bowl, beat eggs until light and lemon colored, then gradually add in oil. Beat in sugar gradually. Sift together dry ingredients and add to egg mixture
alternately with the orange mixture, about 1/3 of each at a time. Mix until smooth. Pour batter into individual cupcake wrappers. Top with sliced almonds if desired. Bake at 325 degrees for approximately 1 hour, or until done. Cool before removing from pan.
From there, you can decorate these Rosh Hashanah cupcakes however you like, whether you want to use the star of David, simply ice them white, or leave them as they are, it's entirely up to you.
